The Simple Skirt Steak
This is a simple skirt steak recipe I use for my breakfast and the half serving is for lunch.

Method
Warming Up
Instructions
Take the skirt steak from the fridge, putting it out on a cutting board. Season with Black Pepper and Garlic Salt. Let it set to room temperature for a half hour.
Tips and technique
Season how much you want to taste it. I like a heavy garlic flavor, especially since I'm on the carnivore diet.
Warm The Oven
Instructions
Pre-heat your oven to about 450F. Have a pan, or preferably a pan with a cooking rack to evenly distribute heat.

Nothing fancy, can get a pan with a cooking rack fairly cheap at a home store.
Heat the skiller
Instructions
Now that you're within 10 minutes of the steaks bein to room temperature, go ahead and get your skillet prepped. I have steel pans, so it takes about that long to get to the point of Leidenfrost effect happens. If you have teflon or other non-stick pans, I urge you to get steel or titanium, that other crap breaks off into your food.

Pan Searing
Instructions
Now that's it to temperature, make sure you use butter/lard/tallow/oils to help sear and lock in flavors. I do about 2 minutes per side at a medium heat, making a nice crust.
Now into the Oven
Instructions
After searing both sides, using tongs or whatever you have, lift it from the pan, and place it on the cooking rack over a pan to catch the drippings. We want it to heat both sides.
Taking it out of the oven.

Simple as simple gets. I have a meat thermometer, and I generally like my steaks at a medium rare, so that's an internal temperature of 135f. However, I take mine out at around 130F because they're still heating up. Then let it set on a plate, for about 5 minutes.

I cut mine into two sections. I save half for lunch. And go ahead and eat the other half. Tastes good. Nice and Simple.
